Cucumber Rolls with Char Tartar and Paprika Oil

Instructions:

For the paprika oil, mix olive oil with paprika powder and infuse for 30 minutes. Then strain through a coffee or tea filter.

For the tartar, remove the remaining skin and bones from the smoked char. Pluck or cut into fine pieces. Mix with the remaining ingredients, season with salt and pepper.

Slice some of the cucumber rarities lengthwise with a peeler. Lay the slices in sheets on a work surface. Place a lemon balm leaf and 1 tablespoon of the char tartar on each front third and roll up.

Cut the remaining cucumbers into various shapes (e.g., thicker slices, wedges, or sticks).

For the dressing, mix all ingredients together well.

Arrange the cucumber rolls and the remaining cucumbers on a plate and drizzle with some of the dressing. Garnish with the paprika oil and fresh lemon balm.
