For the melanzani vegetables, wash the melanzani and cut into cubes. Briefly sauté the melanzani and onion in hot oil, add soy sauce and sherry and continue to sauté for 10 minutes.

Mix whipping cream and cornstarch well and thicken the vegetables with it. Season to taste and sprinkle with parsley.
