Blanch (scald) tomatoes, skin, remove seeds and cut into cubes. Cut basil into strips and stir in about half. Season with salt and pepper, drizzle with 2 tbsp. olive oil.

Cut avocado in half, remove peel, pit, mash or mash with 1 clove of garlic, juice of one lemon and zest. Cut olives into small cubes, fold in half.
