For the black pudding with sour beets and roasted apples, cut the bacon into small cubes and the onions into rings. Peel the apples and cut them into small cubes as well. In the meantime, heat the pork lard and fry the bacon cubes. About halfway through, add the onion rings and then fry the preheated black pudding until crispy, carefully turning it several times.

Add the apple pieces only at the end and fry them as well. Arrange the crispy fried black pudding and garnish with garnish, apple cubes and onion rings. Serve with the prepared roasted potatoes and the sour turnips.

For the sour beets, place the beets in water, season with caraway seeds and boil until soft. Heat lard, mix in flour and onions and roast to a light roux. Stir beets and, if needed, some cooking liquid into roux and cook well. Add whipping cream, season with salt, sugar and pepper.
