Beans and Long Grain Rice Creole Style

Instructions:

Rinse red and white beans and soak covered with enough water for one night. Cut sausage into slices and brown in a roasting pan.

Remove the peel from the onion and garlic and cut into cubes. Sauté briefly together with the sausage. Add the beans with the salt, soaking water, marjoram and bay leaf spice. Cover and cook over medium heat for 1 to 1 1/2 hours. If necessary, add a little more water. Add long grain rice and tomatoes with juice. Chop the tomatoes a little bit. Cook for about 10 minutes with the lid on, stirring frequently. Clean the celery and peppers, chop and add. Cook for another 10-15 minutes with the lid closed. Season the mixture with salt and freshly ground pepper to taste. Serve with fresh white bread.
