Boil Fleckerln in plenty of salted water until soft, rinse with cold water and drain well.
Peel onions, dice finely and sauté in butter or oil.
Cut the smoked meat into small pieces, add to the onion, fry briefly and pour in approx. 100 ml of cream. Add Fleckerln and boil down well. Season to taste with salt, pepper and chives.
Remove from heat, mix sour cream, remaining cream and egg yolk and add to ham dumplings, but do not cook any more!
Beat the egg whites with a pinch of salt until semi-stiff and stir into the slightly cooled mixture.
Pour into a buttered dish, sprinkle with cheese and paprika powder and bake in the preheated oven on the lowest rack under the grill for about 3-4 minutes until golden brown.
