To make chipotle chicken wings, first mix chicken wings, salt, sugar, cinnamon, cumin, juice of one lemon, new spice, orange juice and zest, chipotle sauce, olive oil and pepper in a large bowl. Let marinate in the refrigerator for 1-2 hours.
If preparing the dish in advance, place the whole thing in a freezer bag and freeze for up to 2 months. The night before the party, place the frozen chicken wings, along with the marinade, in a flameproof shallow dish and defrost in the refrigerator.
Preheat the stove to 190 °C. Bake the wings, turning occasionally, for about 1 hour, until they are golden brown, the marinade has caramelized and the oil has settled. If they are not yet brown and crispy, increase the heat or turn on the grill function. But be careful: if you do, it will go very quickly!
Before serving the chipotle chicken wings, drain the fat, preferably on paper towels.
