For the cherry pancake, whisk the egg yolks and sugar until foamy. Add salt, flour and milk until a thick dough is formed. Let it rest for a short time.
Mix the pitted cherries into the dough. Beat the egg whites until stiff and fold them in.
Heat some oil in a pan and pour in a fingerful of batter. Bake on both sides until light brown. Tear the dough with a fork and let it fry again for a short time.
Prepare the rest of the dough in the same way and serve the finished Kirschenmarren sprinkled with powdered sugar.
