Cut onion in half. Brown with meat without fat in a large saucepan. Extinguish with tap water. Cover and simmer on low heat for 50 minutes. Clean cooking vegetables, cut into small pieces. Add new spice, bay spice, thyme and marjoram (set a few leaves aside), season with pepper, season with salt. Leave to infuse for a further half hour. Remove leg slice, use elsewhere. Pour broth into a strainer lined with a muslin cloth, catch. Clean celery, carrots and red onion, cut into slices. Steam in oil. Pour in the broth. Simmer on low heat for 3 minutes. Cut apples in half, stone, cut into slices. Heat with dried plums in the broth. Season spicily. Garnish with marjoram and put on the table.

Tip: Give preference to fresh thyme over dried!
