For the cherry cake made with whole wheat flour, first wash and pit the cherries. Separate the eggs. Beat the egg whites with a pinch of salt until stiff.

Mix the egg yolks with the powdered sugar, lemon zest and vanilla sugar until foamy. Gradually add the melted butter – continue mixing. Stir the flour and cherry rum into the yolk mixture.

Gently fold in the beaten egg whites. Spread into a greased, floured baking pan. Spread the pitted cherries on top and bake in the oven at 170 °C.
