Roast sunflower seeds without fat. Rinse orange well, cut peel thinly, squeeze out juice.
Rinse chicory, remove outer leaves, cut into quarters, remove inner wedge. Blanch in boiling water for about three minutes. Drain and place in a shallow dish. Keep warm. Heat blue cheese with milk and orange juice (do not make!).
Add sour whipped cream and crème fraîche. Thicken a little with biobin and season with pepper, salt and coriander. Spread the sauce evenly over the chicory and sprinkle with sunflower seeds and sliced orange peel.
Serve with roast patties or potato patties.
