For sour shearling put the meat as usual with vegetables and spices in boiling water and simmer until tender, cool and then refrigerate.
Slice the shearling rib thinly, cut onion into rings and chop red onion. Mix a marinade of salt, olive oil and apple cider vinegar with blossom honey. Put cut shearling on plates, put onion on it and pour marinade over it. Serve the sour shearling rib.
