For the onion roast, cut the roast beef, if not already cut, into 1.5 to 2 cm thick slices, salt and pepper and turn in flour.

Heat half the clarified butter and sear the roast on both sides for about 2 minutes – remove the meat from the pan.

Heat the rest of the clarified butter and fry the finely chopped onions in it. Remove with soup and put the meat back in.

Who would like to have it through can let it now still after-pull. If you want it to be creamier, you can puree it or dust it with flour.
