Liquefy the butter, add the chickpea flour. Once the quantity is hot, toast on low heat, stirring constantly as the quantity sets slightly.
After about 15 min, the flour will turn slightly brown and develop its nutty pleasant taste.
Add the coconut oil, stir and remove from the heat. Add the grated lemon zest and vanilla sugar, sift the powdered sugar and fold in.
For further processing there are now two possibilities:
a) either wait a little while until the mixture has cooled down and then roll it into balls, or
b) spread the mixture on a tray and let it set in the refrigerator. Then cut the solidified quantity into cubes.
Instead of coconut, use the same amount of sesame seeds. After adding the sesame seeds – and before adding the lemon zest, vanilla sugar and powdered sugar – roast the mixture for 5 to 10 minutes until it is medium brown.
