For the Fried Spelt Rice Loaves with Vegetable Strips, cook the spelt rice in the vegetable soup for about 15-30 minutes until tender, depending on the variety and package instructions.

Using a vegetable peeler, peel half of the zucchini and half of the carrots lengthwise into thin strips and blanch.

Grate the rest of the carrots and zucchini and saute briefly in olive oil.

Grind half of the cooked spelt rice in a food processor, add the other half whole. Mix with eggs, grated zucchini, carrots and spelt crumbs. Flavor with chopped herbs, salt and pepper. Form loaves from the mixture and fry in olive oil until crispy.

Drizzle the blanched vegetable strips with a little olive oil and season with salt and pepper.

Mix sour cream, herbs, salt and pepper to a sauce.

Serve spelt rice loaves with vegetable strips and the herb cream.
