Cut meat into cubes and brown all around in clarified butter. Season with salt, pepper and cayenne. Add passion fruit juice, pineapple juice (unsweetened) and coconut cream (sweetened), fold in well, simmer the whole thing with the lid closed for about 1 1/2 hours.
Remove the skin from the mangos, cut the flesh from the stone all around and cut into cubes. Clean and rinse the spring onions and cut into rings. Add both to the meat 10 minutes before the end of the cooking time. Season to taste with lime zest and lime juice, salt and freshly ground pepper.
Tip: Instead of clarified butter, you can also use butter in most cases.
