Instructions:

For the cooked pork loin with vegetables from the tray, first rub the pork loin with salt and pepper and sear on all sides with a little oil, then remove from the pan and wrap with the meadow straw, and tie tightly with the string.

Leave to roast in the oven at 120 °C for about 1 ½ hours (core temperature 65-70 °C). Remove from the tube and sear on all sides.

Peel the root vegetables and cut into quarters lengthwise, peel the onion and cut into thin slices. Preheat the oven to 200°C, mix the vegetables with the remaining ingredients and place them on a baking tray covered with baking paper, season with salt and pepper and roast in the oven for about 20 to 25 minutes until soft.

Arrange the vegetables on a plate, cut the pork loin into thin slices and place on top. Serve the cooked pork loin with vegetables from the tray.
