To make the balsamic pattison, in a frying pan, cream 2 cloves of crushed garlic in butter, add sugar and brown lightly. Quarter the Pattison squash and add it as well.
Season with salt and white pepper, grate thyme and sprinkle over top. Gradually glaze Pattison squash with the balsamic and garnish the balsamic Pattison with chives.
