Mix the polenta into the double mass of boiling salted water and make according to package instructions. Spread the finished polenta mixture on a tray coated with olive oil and cool. Clean the vegetables and cut them into slices.
Spread the polenta mixture with the tomato sauce and cover with the vegetables. Slice the mozzarella and spread evenly on top, finally sprinkle with pizza cheese. Season with salt and herbs. Bake in the oven at 180 degrees for about 20 minutes.
Portion the polenta pizza and arrange on plates.
