For the wok vegetables with glass noodles, soak the glass noodles in warm water for about 10 minutes.

Clean and quarter the mushrooms, clean the broccoli and divide into roses. Peel the carrots and cut them into thin strips, roughly chop the garlic cloves. Wash and chop the Chinese cabbage, chop the chili.

Heat the oil in a wok or large frying pan and fry the chili and garlic until hot. Add broccoli and carrots and sauté until hot, about 2 minutes.

Add mushrooms, Chinese cabbage, sugar pea pods and fry again for about 2 minutes.

Add rice vinegar, soy sauce, fish sauce, salt, mix in the glass noodles and stir through for about 2 minutes.

Arrange the stir-fried vegetables with glass noodles and serve.
