For the fish with glass noodles and sprouts, soak the glass noodles in hot water. Cut the fish into cubes. Grate garlic and ginger.

Mix the soy sauce with the cornflour. Put the sprouts in a sieve and rinse. Heat sesame oil in a wok and sauté fish and sprouts for about 1 minute.

Add garlic and ginger and fry briefly. Add the soy sauce and bring to the boil. Drain the glass noodles and add to the wok.

Mix everything well, cover and let it stand for 5 minutes and serve the fish with glass noodles and sprouts sprinkled with chives.
