For the potato gratin, peel and rinse the potatoes and slice them. Grease the Roman pot with butter, layer the potato slices. Season each layer with salt, pepper and nutmeg (freshly grated).

Whisk the eggs with the sour salt, whipping cream, pepper, nutmeg and herb salt. Pour over potato slices, sprinkle with cheese and place thyme sprig on top. Briefly rinse the lid of the Roman pot with cold water, close the pot and place it in the cold oven. Cook at 225 °C (gas: level 4-5) for 1 hour.

Serve steamed vegetables with the gratin, e.g. carrots, beans, zucchini, cauliflower.
