Remove the coarse stems from the arugula. Rinse the arugula, watercress and sorrel and spin dry. Mix with plucked pimpinette and chervil leaves. Clean mushrooms, cut into slices and add to the lettuce.
For the dressing, mix the juice of the lime with crushed garlic clove, salt and pepper. Add olive oil gradually with a fork.
Mix the prepared leaf salad with the sauce. Serve on the spot with freshly shaved Parmesan and dressed with remaining lime wedges.
Our tip: It is best to use fresh herbs for a particularly good flavor!
