For the warm arugula salad, wash the arugula and chop a little. Arrange a bed of salad with it on a serving platter.

Dice the cleaned shiitake mushrooms, bell bell pepper and shallots, season and sauté in olive oil.

Deglaze with the balsamic vinegar and spread over the arugula while it is still hot.

The warm arugula salad is ready – bon appétit!
