Have fun preparing this mushroom dish!
Melanzane rinse, pat dry and cut into slices. Finely dice the onion and garlic clove. Heat the oil in a frying pan. Fry the slices of melanzana, onion and garlic clove briefly. Clean the oyster mushrooms, rinse and cut into bite-sized pieces.
Add the mushrooms and tomato puree to the frying pan as well. Add bay leaves, salt and pepper. Simmer on low heat for half an hour. Fold in whipped cream, let it bubble up briefly. Season to taste with salt and freshly ground pepper.
Serve with long grain rice
