For the trout cream, clean (peel) the celery and apple and dice finely. Finely chop herbs. Drain capers and chop. Sprinkle half of the lime juice on the apple and mix.
Now pluck trout fillet into pieces and place in a bowl. Mix with sour cream and mayonnaise, salt, pepper, cayenne pepper and curry powder, then add celery, apple, capers and herbs, mix gently and season to taste.
Serve in jars, together with wholemeal bread or similar.
