Instructions:

For the cheesecake, wash raisins and sprinkle with rum, allow to soak a little. Peel carrots, cut into 1 cm slices and steam in salted water until soft. Drain, cool and puree with milk.

Beat egg yolks with sugar, vanilla sugar and butter until creamy. Add raisins, carrot puree, bread crumbs and Gouda. Season with cinnamon, rose water, nutmeg spice and cardamom.

Whip egg whites with 1 pinch of salt until very stiff and fold into the mixture.

Preheat oven to 200 degrees Celsius, grease cake springform pan with butter and sprinkle with breadcrumbs.

Pour in the dough and smooth it down.

Bake in hot oven for about 1 hour. Let cool in the pan for 10 minutes, turn out onto a kitchen rack and let rest for a few hours.

Sprinkle the cheesecake with powdered sugar before serving.
