Instructions:

Cut the dried apricots a little bit and soak them in a little water for about 120 minutes. Then blend the apricots together with the bananas, the silken tofu and the almond paste in a hand blender until a creamy mixture is formed. If necessary, sweeten with a little honey or agave syrup.

Then evenly distribute the cream in dessert bowls and garnish with lightly toasted pine nuts.
