For the three-cheese pancakes, first prepare the pancake dough.

Whisk the milk, flour, eggs, mineral water, salt, pepper and nutmeg into a smooth dough and let it swell for half an hour.

Grate the Emmental, chop the Gouda and the Österkron well. Preheat the oven to 200°C. Melt the butter in a frying pan and fry the pancakes in batches on both sides. Immediately after turning the pancakes, spread a little bit of the oestrus evenly over the pancake, season with a pinch of nutmeg, sprinkle with a little Emmentaler and sprinkle with a few pieces of Gouda. Bake the pancake together with the pan in the oven for 10 minutes.

In the meantime, wash the chives, shake dry and chop. Repeat the process until the dough is used up.

Serve the three-cheese pancakes sprinkled with chives.
