Carve the rabbit into pieces, turn it lightly in flour to the other side and fry it with a little oil in a frying pan on all sides. Lift the meat out of the frying pan and dry well with kitchen paper. Put the oil in a heavy saucepan.

Peel the garlic and chop it finely together with the anchovy fillets and rosemary.

Put the rabbit pieces in the cooking pot, season lightly with salt and pepper, add rosemary, garlic, anchovies and vinegar and steam the whole thing on the lowest flame for 50 to 60 min with the lid closed. In between turn a few times to the other side, maybe add a little water or hot beef broth.
