Wash herbs and shake dry.
Cut cucumber into thin slices or pencils.
Halve the matjes fillets.
Prepare egg noodles according to package directions.
Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.
Wrap and place the matie fillets in the egg noodles, top with the cucumber pieces and herbs.
Form rice paper into rolls.
Serve with dip of your choice.
