Instructions:

Stir cottage cheese and loosen, season with salt and pepper.

Cut beets into bite-size pieces or use a sprial cutter to shape into veggie noodles.

Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.

Spread cottage cheese on top, place beet on top, sprinkle with sesame seeds and roll up the rice paper tightly.
