Instructions:

Cut the zucchini into thin slices.

Finely dice the spring onion and cut the greens into delicate rings.

Cut blunt into thin slices.

Soak rice paper sheets in lukewarm water for about 20-30 seconds, remove and wipe well.

Place sauerkraut and remaining vegetables and top with blunt slices.

Form rice paper into rolls.

Serve with dip of your choice.
