For the Stöcklkraut, quarter or sixth a small head of white cabbage, DO NOT remove the stalk, as this holds the leaves together. Put cabbage quarters in a pot with water, caraway seeds, salt and some vinegar and boil until soft. Remove cabbage pieces and add to roast pork in the oven for the last 15 min. and pour gravy over and roast. Serve a piece of cabbage on each plate with the roast.
