Clean the spinach, snipping off the stems, rinse the leaves carefully a few times.
Sauté the onion, garlic and ginger, crush the spices in a mortar.
In a frying pan or wok, sauté the onion, garlic and ginger, add the spices, also salt, curry and sugar. When everything is well mixed and intensely fragrant, add the drained spinach leaves and gently toss to combine. In the process, the leaves should intimately combine with the spices.
Finally, mix in the yogurt and arrange the vegetables on a platter. Toast the sesame seeds in a dry frying pan until golden and sprinkle over the spinach.
Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
