For the spelt-vegetable pizza, mix the spelt flakes with sugar and yeast in a little lukewarm water. Add the oil and knead all ingredients to a smooth yeast dough. Leave to rise for 45 minutes.
Coarsely grate the vegetables. Peel and finely chop onion and garlic. Cut the vegetables into thin slices or bite-sized pieces. Season with olive oil, spices and chopped herbs.
Roll out the dough into a rectangle and place on a baking sheet. Spread the vegetables on top and sprinkle with the cheese. Bake the spelt-vegetable pizza at 200 degrees for about 45 minutes.
