Soak the bean seeds overnight in enough water. Cut the bacon and ham into small cubes. Heat the fat in an appropriate saucepan and fry the bacon and ham in it. Clean and rinse the vegetables and cut them into small slices. Add to the bacon with the drained bean seeds and sweat briefly. Add the beef broth and simmer for about 25 minutes over medium heat. Peel the garlic cloves, chop them finely and add them to the soup with the salt and the finely grated bay spice, season with the pepper. Peel the tomatoes, remove the seeds and cut them into small cubes. Then stir into the soup with the defrosted peas as well as the long grain rice and make it light for another 10 minutes. Select, rinse and chop the sage and basil and add to the soup. Season repeatedly before serving. Offer the Parmesan cheese separately.
