Sour Carp with Raisins and Pine Nuts on Celery Salad

Instructions:

Bring vinegar and water with salt, sugar and spices to a boil and boil for 2 minutes. Then remove the broth from the heat and put the carp in it. Add the raisins and pine nuts and let the carp marinate for at least 24 hours.

Remove and wash the individual celery stalks, if the stalks have beautiful leaves, cut them away and set aside for decoration.

Peel the stalks with a peeler so that you get long threads. Now marinate the threads with salt, apple cider vinegar and walnut oil.

As a garnish for the salad, remove the raisins and pine nuts from the broth and finely chop the leaves from the celery stalks and add them to the salad as well.

Remove the carp from the broth and cut it into four equal pieces. Put the celery salad on the plate and place the carp on top. Place a few mandarin orange slices on top as garnish.
