For the smoked salmon mousse, soak the gelatin in cold water. Puree the smoked salmon fillet and sour cream with a hand blender. Grate the horseradish. Whip the cream until stiff.

Heat the lemon juice, squeeze the gelatine well, dissolve in hot lemon juice and immediately mix into the pureed smoked salmon fillet.

Then fold in whipped cream, carefully add horseradish and season with salt and pepper. Fill the smoked salmon mousse into glasses and refrigerate overnight.

Arrange the glasses on marinated Vogerlsalat with pomegranate seeds. Serve with toasted bread or baguette.
