For the salad plate with smoked salmon pluck apart the frisée, divide large leaves and rinse. The cleaned Vogerlsalat is cleaned under running water.
Cut the salmon slices into even strips of the desired size.
For the dressing, mix salt, pepper and sugar with vinegar, lastly mix in the oil with a small whisk.
Arrange the lettuces on a platter, top with the smoked salmon and finally drizzle the dressing over the salad plate with smoked salmon.
