A simple bread always succeeds!

For the bread, pour flour onto a clean surface. Make a well in the center. Crumble in the yeast, add sugar and salt. If you like you can add spices (anise, caraway, dried onion, etc).

Always add enough water so that the well is just moist. Fold in flour from the edge and add water again. Knead a smooth dough.

The amount of water depends on the type of flour. 405 needs less than 1050 or whole wheat. If the raw dough is too tough – add more flour.

Knead vigorously for a good 10 minutes, boxing, tossing, pulling and forming the dough back into a ball. Then place in a bowl and let rise, covered with damp cloth, in a warm place. Preheat the oven to full. Knead the bread firmly for another 10 – 15 minutes.

Then shape on the baking sheet or place in a bread pan. Cover and let rise for another 30 minutes. Then bake for 30/40 minutes at about 180° C. Plain bread must sound “hollow” when tapped at the bottom.
