For the apricot dumplings with amarettini hazelnut crumbs, first mix the curd cheese, egg, salt, flour and breadcrumbs and work into a dough. If it is still too sticky, add some breadcrumbs. Core the apricots and place a small piece of chocolate in the center of each and coat with the curd dough. In a large pot of salted water, simmer the dumplings for about 20 minutes.

For the crumbs, place the amarettini in a freezer bag and crush. Briefly roast the grated hazelnuts in a pan without fat and add the amarettini crumbs. Turn the apricot dumplings in it and serve the apricot dumplings with amarettini hazelnut crumbs right away.
