* Instead of shrimp, giant shrimp can also be used. Shrimps and prawns are expensive delicacies. To enjoy them properly, it is worth preparing them perfectly. This includes the removal of the intestines. To do this, at the very back (narrow side) with scissors or a very sharp kitchen knife cut the intestine (dark visible) with a small incision. In front (head side), pull out the intestine very precisely with tweezers. Make sure that it does not tear!
For the marinade, stir all ingredients together. Add shrimp, mix and marinate for approx. 30 min. with lid closed.
Heat oil or possibly clarified butter in a frying pan. Reduce temperature, fry shrimp on both sides for about 2 min., keep warm in stove heated to 60 °C.
For the sauce, heat oil in the same frying pan. Cut chilies in half, remove seeds and cut into strips. Add them to the oil together with the shallots and garlic and sauté lightly. Add tomato ketchup, soup or possibly wine and vermouth, cook a little and season. Add the cream and bring to the boil. Shape the shrimps in the sauce.
Serve on hot plates and garnish with chili cut into rings.
Serve with pistachio long grain rice (see recipe).
By the way: Did you know that clarified butter is obtained by extracting water, milk protein and lactose from butter?
