Instructions:

Pour semolina with cold milk, season lightly with salt, swell for 2-3 hours, stirring occasionally.

Stir in egg yolks, sweetened snow and lemon zest.

In a large frying pan melt butter. Pour in gratin mixture and bake at low temperature.

When bottom is golden brown, tear Schmarrn into pieces.

Turn and brown on the other side.

Fillet the oranges, collect the juice and heat with the cornflour.

Remove from heat and soak orange fillets in it. Flavor with liqueur if desired.

Serve with powdered sugar, almond flakes and orange confection.
