For the baked apricots, blanch the apricots briefly, peel, core and halve.
Sugar well, drizzle with rum and let stand for 1 hour. Turn the well drained apricot halves in flour, egg and sweet breadcrumbs and fry them in hot fat. Meanwhile, boil the juice extracted by the sugar and pour it over the baked apricots when serving.
Serve the baked apricots with vanilla ice cream.
