For the red curry paste, first dry roast the cumin and coriander seeds until fragrant. Allow to cool.

Either pound or grind in a mortar or an old coffee grinder.

Blend in a food processor with all other ingredients to make a smooth paste. Add a little sesame oil if needed for consistency.

Your homemade red curry paste is ready.
