For the potato omelet with cheese, first wash the potatoes well and cook them with caraway seeds in salted water. Then peel and cut into slices.

Chop the pumpkin seeds and sunflower seeds. Peel onions and cut into thin slices. Heat butter in a large frying pan and fry onions until golden. Add remaining ingredients – except cheese – and toast well. Mix in cheese and stir well again.

Arrange the potato omelet with cheese on plates and sprinkle with chopped parsley.
