Instructions:

Lentils: Boil all ingredients up to and including fennel seeds. Add lentils, simmer at low temperature with lid closed for approx. 25 min. until just tender. Drain, remove onion, set lentils aside with lid closed.

Fennel: Remove innermost part of fennel halves, cut into small pieces, set aside with lid closed. Steam fennel halves in steamer basket until just tender, cool slightly.

Sauce: Stir all ingredients, season, mix with lentils while still warm and fennel set aside.

Serve: Place fennel halves on plates, spread lentil salad evenly on top, garnish. Serve lukewarm or cooled.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also stand out for their fresh taste!
