Cut finger-thick tranches from the pike, season with salt and a little pepper, turn in milk and flour on the other side and roast in butter leisurely nice and brown. These pieces of pike are carefully piled up in a plate and kept warm in the stove.

Pour off almost all the drippings, then add the butter and the very finely chopped onions, sauté until translucent and sprinkle with a little flour. Now deglaze the onions with the white wine and simmer the sauce until it is creamy. Before adding the finely chopped chives and parsley, season the sauce with the juice of a lemon and salt. Remove the pike slices from the stove, pour the sauce over them and serve them with boiled potatoes.

Note: Not only pike are suitable for this Flueler-style dish. In the Lake of Uri you can also catch Balchen, Albeli, Seeforellen, Egli and Röteli, which can be prepared very well Flueler style.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried ones.
