Instructions:

For the pike perch wrapped in bacon with pumpkin vegetables cook blue potatoes. Finely chop the onion and garlic and sauté in fat until translucent. Add the grated pumpkin, deglaze with white wine and season to taste with salt, pepper and paprika powder.

Cook over medium heat. Meanwhile, season pike-perch fillets with salt and pepper and drizzle with lemon juice. Wrap with a slice of breakfast bacon and sear briefly.

Place in an ovenproof dish and finish cooking in the oven at about 160 °C for about 12 minutes. Refine the pumpkin vegetables with soy cuisine or cream and season again.

Peel the blue potatoes and fry in oil, add salt, rosemary needles and fry briefly. If you use dried rosemary, add it at the end.

Arrange everything with a sprig of romaine and sprinkle the pumpkin vegetables with paprika powder. It goes very well with lettuce.
